According to Eurispes, today between 6% and 9.5% of Italians follow a vegetarian or vegan diet, and the percentage of vegans has quadrupled in the past 10 years. Those who adopt a plant-based diet can experience significant clinical improvements: reduction in “bad” cholesterol, blood pressure, blood sugar, and CRP levels—key indicators of cardiometabolic health.

A simple recipe to try at home – Warm Spelt and Seasonal Vegetable Salad

Ingredients (serves 4):

  • 300 g pearled spelt

  • 1 zucchini, 1 carrot, 1 red bell pepper

  • 2 tablespoons extra virgin olive oil

  • Juice of half a lemon

  • Fresh herbs (thyme, parsley, mint)

Method:

  1. Cook the spelt in salted water for about 20 minutes, drain, and let it cool slightly.

  2. Dice the vegetables and sauté them briefly in a pan with a little oil, keeping them crisp.

  3. Combine spelt and vegetables, season with oil, lemon juice, and the chopped fresh herbs.
